7 years later

Awhile back we went to some friends house and she had made a pear pie that was amazing.  I personally do not like pears but thought this pie was great and Mark really liked it too so I decided to try to make one.  The reason why this is blog worthy is because I have not attempted a pie crust for like 7 years. My first semester at BYU Idaho I took Cooking 101.  One of the things they had us make was a pie crust.  So I made my pie crust and as I took it out of the oven I accidentally bumped the edge of the counter and the whole pie crust fell out of the pie pan.  I could not believe it!  So that really turned me off of pie crust making. I could do graham cracker crusts no problem but the real flaky thing no way.  But this week I finally attempted one.  It was very messy! Normally I try really hard to clean up while I bake but I was all over the place while making this pie.




We had the missionaries over for dinner last night and tried out the pie and they said it was great.  Mark and I were pleased too.  I am happy I tried to make a crust and can now make chicken pot pie for dinner which is another reason why I thought I should attempt a crust again.


Jared, like most little kids is fascinated with the dishwasher.  If we do not make sure it is all the way pushed in and locked he will climb on up and start playing.  Which freaks me out because we have knives in there. He will often crawl over to it and try to open it and gets disappointed when he can't.  


Also, like most kids he loves getting into cupboards.  We were really lucky and when we moved into our house the people who lived here before had childproofed a majority of the kitchen cupboards so we didn't have to.  There are just 2 that he can get into so we put unbreakable things in there which Jared loves to play with.  He especially likes our plastic strainer and lately has tried to take it with him when he crawls up the stairs. The soda cans are a big winner too.

Pikes Peak Surprise!


Mark's dad is in town visiting and the one thing he really wanted to do was drive up to the top of Pikes Peak.  So yesterday we took off and I was so happy because the trees had started changing!!  I really didn't think that they would have begun yet.  Unfortunately, the day before there had been a helicopter crash (amazingly no one got hurt) so we got to mile 13 (its 19 miles up to the top) and were stopped because the road was closed as they were getting ready to bring the helicopter down. But after they passed we drove on up and enjoyed the beautiful leaves.

I love how it looks with the bright blue sky and green behind.  



It was really windy on top so Jared was not thrilled but here they are.

We are planning a trip over to Gunnison Colorado in 2 weeks to check out the colors. In Colorado the changing of the leaves is mostly just to yellow so they call it the "Gold Rush" but in Gunnsion they get more reds so we hope we can catch it.  I can't wait.

The Salad and some drama

Awhile back we went over to some friends house for dinner and at this dinner our friend made the most delicious salad ever.  Never in my life did I think I would love a salad unless it was fruit or snicker  salad but this salad has the best combination of ingredients.  Mark and I both really like it.  So I thought I would share it with you all in case you need some help eating vegetables as I do .

Salad Ingredients
1 bunch Romaine Lettuce
2/3 of a bag of spinach
Green onion
Diced apples ( I prefer Gala)
Crasins
Butter toasted sliced almonds

Dressing (optional but tastes really good)
1/2 cup sugar
2 tsps salt
3/4 cups cider
2 cups olive oil
2 tsps Dijon mustard
4tsps poppyseed dressing

Combine all salad ingredients
Mix together all dressing ingredients (it makes a ton so you could cut in half or make it all and freeze the rest)
Combine salad with dressing and toss.

The 6th grade Social Studies teachers at Mark's school are so not fun to work with. As I mentioned the curriculum for 6th grade Social Studies was changed in his school district this year.  At the end of last year Mark spent a good amount of time going over the new curriculum and making an outline on how to teach it while lining it up with the State standards.  Well, this rather difficult teacher (ask any teacher at Mark's school who has to work with her and they will say she is difficult) told Mark (not knowing that he was the one who wrote out the years outline and had it approved by the district) that she was disregarding what the District sent out (Mark's outline) and teaching it how she wanted. There was a meeting at the end of last year that all 6th grade Social Studies teachers were invited to specifically designed to give teachers a chance to discuss how they would like the curriculum taught and no one from Horizon came.  No One. Okay present day.
Friday: Mark gets an email from said difficult teacher saying that she was "heartbroken that this subject she loves is being taught so uncohesively and out of order" Really?  If you were going to care maybe you should have come to the 6th grade curriculum specific meeting!  You think? The other email Mark got Friday (from the admin) said that the 6th grade SS  teachers were all going to have a sub on Wednesday for half the day so they could meet together to discuss curriculum (and do data entry another headache) with one of the administrators. Fine. Great it will get all figured out.
Monday: Mark got an email from the 6th grade SS teachers saying that they were having a meeting today (Tuesday) at 2:30-3:00 and would he come.  Well Mark teaches 8th grade US History and has class during that time so No, he won't be able to make it. (And yes it is common knowledge that he teaches 6th and 8th grade)  Seems slightly suspicious to me but what do I know?  I don't think it's so much that Mark has to teach it his way but it was the plan set in place and everybody had a chance to come put their two cents in. Even if they couldn't go to the meeting they could have made an effort to send someone from their school. And its never fun to have someone say, basically "your ideas stink. I don't like them" especially when you put a lot of time into them. I miss Skyview, it was so orderly. Even if Mark is getting IB training I hope he can go back to Skyview next year.  This school (teachers and students alike) have just been a headache.  I hope that soon he can just stay in his class and not have to deal with other people.  My sister's husband is teaching Science at a small school and he is the department, there is no one else teaching Science.  Sounds great.  I do believe that collaborating with other teachers can be very useful but it is not proving so here.  Mark is ready to go teach internationally again and would leave tomorrow if he could.  Such drama.

I had no idea

that Mark has mad kite flying skills! 


Monday was a beautiful end of summer day so we went over to this great park near where we live and flew a kite. Our neighborhood was supposed to have a real park but the developer apparently got tired of the area and left many things unfinished.  Sad. Back to the kite flying. In the 6 years we have been married Mark and I had never flown kites together. He told me that he was raised in Afghanistan and that is how he learned to fly a kite. Because of course Mark would totally fit in there. It was a beautiful fun day.

After awhile Jared decided he wanted to go fly the kite with dad and went off to meet him only he went the wrong way, maybe he thought he could catch the kite?

I have wanted  a cute picture of Jared and I like this forever but it is getting increasingly difficult to lift him and keep him up long enough for a picture.  We will keep trying. Until then this will have to do.
